Hello to all the carnivoirs out there.
Rose Mountain Farm is diligently working on the retail store front coming in 2013 by May 1. The store will be the go to place for all your needs for local fresh cut meats. I have formed a coalition of growers from Ashe county to provide local humanely raised livestock. I will provide beef, pork, lamb, goat, trout, and NC fresh seafood. I am so looking forward to this endeavor. I will be located on main street in Lansing, NC. At 136 South Big Horse Creek Rd.
I will also be producing the finest smoked and cured sausages and take home cooked items such as meat loaf and stews.
There is a lot of work to do so be patient, it is coming in 2013.

Howdy to all you local fresh foodies.
The farm is winding down from vegetable production this year and cranking up for more pork production next year. I will be working the winter away, getting my very own store open. Target date will be May 1st, 2013. The store will specialize in Family Heirloom Sausge varietys. Such as links, pattys and frozen. With half the family Irish and the other half German-kentuckian, I think the flavors and aromas will entice the most skeptical sausage consummer. We are looking forward to trialing many new recipies this winter. There will be an emphasis on sausages that will be nitrate free and we will only use humanely raised and antibiotic free livestock. We are begining our own beef production and are looking to out source to local farmes for pastured pork. Thus keeping the local farms in business through value adding product locally and offering some part time employment in the furture.
The sausages will be air dried and fermented along with apple, cherry, hickory smoked options. With such recipies as bratwurst, andulie, chorizo, cumberland, pepperoni and salami varietys. i am especially excited about the Kentucky breakfast from my grandmother Mary Rose. This is my personal favorite because of the texture and flavor. The casings will be natural and vegetable with artisan textures for special holiday meals. We are looking forward to the store supporting local farmers and providing for local customers.Of course, all our products can be shipped for your convienence.

Howdy folks. There will NOT be a Lansing market this week. We are all going to the literary festival at the library to witness the release of " MOUNTAIN MEMOIRS" AN ASHE COUNTY ANTHOLOGY created by local aurthors. Thursday at 11:00 a reading and signing by the authors and editors.
The most exciting thing has happened at Rose Mountain Farm. I have began the process leaping through all the red tape to open my very own fresh cut butcher shop. It will produce many different kinds of fermented and air dried artisinal sausages. Many family recipies from the generations before me. All from the Rose's and the Morris's in the generations past. Along with heirloom recipies from others for pastrami, salami, summer sausage, and peperoni. All the meats in the shop will be produced in Ashe county from neighbors who are certified Humanley raised and grass fed. All meats will be antibiotic free and all the sausages will be free of nitates. The shop will be in Lansing N.C. on main street. More details will be posted periodically through the winter. The store target date for opening is May 1st.

This Saturday I have fresh pork sausage spicy and mild, italian links 1# size, loin roast averaging 1.5 to 2 #. Bacon sliced, side meat, liver, leaf lard, whole ribs.

Howdy folks,
I hope you all are enjoying the nice spring weather. Just a note to let you all know if you dont want to get up early on Saturdays to catch me at the Ashe county market you can get me in the afternoon from 1-6 pm at the Lansing market. Down town Lansing Main street, park by the volunteer fire department walk a short walk across the foot bridge that crosses Big Horse Creek and enter the park. We are under the tent. Hope to see you there Thursday afternoons.

Hope you all are enjoying the spring weather today. It has been a relief from the early heat. The rain has brought forth a nice germination in the garden. Many greens pushing up looking for the sun.
The Sows did well, yesterday, the two of them delivered 15 piglets and all are well. One sow chose not to nurse her babes so her sister picked up the slack and is going to get the mother of the year award from the farm. Photos coming.
This Thursday at the Lansing farmers market from 1-6 p in the park I will be there with pork sausage, mild and spicy. Bratwurst links, liver, leaf lard, loin roast, and green bacon.
Also, from the garden, kale, spinach, baby garlic, lettuce mixed.
I have many vegetables for summer coming up and I will keep you posted as they arrive.
I will also be at the Ashe county farmers market Saturday 8-1
