Pigs and Omelets!
Early Spring Omelet
1/4 lb shiitake mushrooms
4 new spring onions
1 mess of creecy greens( about 2 cups fresh)
3 fresh large brown eggs
Slice, dice, and stir fry the mushrooms, onions, and greens.
Beat eggs and pour over stir fried vegetables in hot skillet coated with oil of choice.
(I prefer fresh rendered hog lard.)
Salt and Pepper to taste.
*note: A crushed sprig of fresh rosemary is always a compliment to a shiitake.

I hope everyone is well and enjoying this spring weather. All is well here at Rose Mountain
Farm. I have recovered from last month's goat loss. I purchased an Alpine nanny with a nanny kid at her side. Her name is Nutmeg and the kid is Clove. It seemed suitable, since the other Alpine is Sage and her two nanny kids are Thyme and Oregano. The 8 nubians are due on the 10th.The sows are being very lazy and sleeping a lot. One is due on Wednesday and the other on Friday. I am trying not to hover to much, but the anticipation is driving me nuts. The incubator has 120 eggs due Monday. I have spent this Sunday morning preparing my brooder box and checking light bulbs. The 90 one-month old birds in the block house will go out on pasture next week if the weather permits. The newly hatched birds will be for sale for the first week for 2.00 a piece. They are from my laying hens and are mixed breed.
The orchard that I leased has 29 trees of heirloom varieties, and a few hybrids that are 10 to 20 years old. The trimming has been time-consuming and costly, but I am hopeful for a small apple crop - plus the 9 trees that are on my farm. The community kitchen in Jefferson is due to open this Summer, and I plan on using it to prepare apple butter, cider, and dried apples. I will send out announcements when the products are ready. I will also send out a 5-day notice when produce is ready to be picked up at the farm.
The shiitake logs that were prepared last year are pinning out and I will be bringing them to the Ashe County Farmers Market Saturday May 6th, if the mushrooms are of suitable size. If anyone has a size preference, feel free to email me and let me know your choice.
I still have potted plants for sale such as peppermint, squash, tomatoes, and have had fresh spring onions this week. Packaged sage, oregano and wild mint have been going well also.
